Tabouleh Salad
This fresh Parsley and Mint salad comes to you all the way from the Middle East. It’s super easy to prepare and with only a couple of ingredients and some chopping patience you have a delicious salad on your hands.
Ingredients
1 large bunch of parsley finely chopped
8 spring onions finely chopped
1/2 cup finely chopped fresh mint leaves
1/2 cup burghul wheat, soaked and drained
2 ripe and firm tomatoes, deseeded and chopped
Juice of half a lemon
Fresh ground pepper
Salt
1/2 teaspoon sumac
Process
First soak the burghul in boiling water for a half hour, drain and fluff with a fork
Chop the parsley fine and add to a bowl
Add the spring onions and mint leaves
Add the burghul and tomatoes
Add the lemon juice, salt, pepper and sumac.
Toss and taste
Add more seasonings to taste
